Introduction

Vitamin C (ascorbic acid) functions in many metabolic processes, especially in those related to collagen formation and the stress response. In addition, vitamin C helps to maintain capillary strength, facilitates the release of iron from ferritin for hemoglobin formation and red blood cell maturation, and may maintain the integrity of the amniotic sac.

Elevated vitamin C levels are associated with excessive intake of the vitamin within 24 hours of the test. Decreased intake produces scurvy with low vitamin C levels.
